The tradition of water bath preservation.
Debra Poulin, owner and chef de cuisine of Twisted Fork, grew up in the Niagara region of Ontario. There, she learned the art of canning at an early age, helping her grandmothers pickle vegetables and make jams. By the age of 14, she was working in kitchens that marked the beginning of her career as a chef. She obtained her NAIT Red Seal Chef Certificate, as well as a Blue Seal Certificate, a Level II Sommelier and various other cooking courses, including a pastry course in Montreal. She developed her culinary style influenced by the many places she worked and her travels around the world.
Family has always been important to Debra and her husband, Stéphane. Her parents in Quebec taught her about the province's traditions and local foods, such as Lac-Saint-Jean blueberries and maple syrup. Although she has traveled extensively, Debra settled in St-Paul, near her in-laws, in 2010 and took up a position as executive chef at the local golf course.
Twisted Fork officially opened its doors in July 2017. The restaurant offers traditional local dishes inspired by Debra's family recipes. Twisted fork offers tasty dishes of modern cuisine inspired by tradition.
With its ECONOMUSEUM®, the company continues its mission to introduce diners to quality local produce while sharing the region's traditional culinary know-how through a wide range of fabulous products.
