Vallier was 10 years old when his father, Charles-Aimé, taught him how to harvest maple sap and transform it into precious syrup. In 1990, Vallier discovered blueberry and honey wines and was inspired. “Why not maple wines?” he thought. With his accounting diploma in hand and the family maple grove as his staging ground, he embarked on an adventure in maple syrup and wine production. Wishing to contribute to the promotion and development of maple-based products, Domaine Acer obtained the very first permit issued to produce maple-based alcoholic beverages in 1996. To this day, the company works hard to develop superior quality wines and to develop and improve its know-how and skills.
The experience begins with a charming walk on the company's grounds. From the cellars where the wines are aged to the sugar shack, a guide will teach you about our production methods, the art of fermentation, and the complex flavours of maple. We will also explore the many benefits of maple products, as well as the many ways to use them in cooking and in cocktails. Let yourself be surprised by the commented tasting of our maple sap wines, syrup and organic fine products, then sit on our terrace with a cocktail in hand.
To keep a gourmet souvenir of your visit, take a tour of the boutique. Wines, sparkling wines and sweet maple sap wines, syrups and butters, jellies, candies and chocolates are a must. You will also find various engraved glasses that allow the wines to give the best of themselves for an optimal tasting experience. You can also buy several cocktail accessories, other maple-inspired products and various snacks to complement your aperitif or picnic.
